Curly Parsley is a boutique hospitality consulting firm based in New Jersey, serving the NJ and NYC metro areas. Founded by Tania Kalian, the firm bridges the critical gap between back-of-house discipline and front-of-house execution. As a self-described “Coordinator of Chaos,” Tania specializes in operational management, financial structuring, and strategic problem-solving for independent restaurants and hospitality groups.

Tania began her career at 14 in her cousin’s NJ restaurant and later earned a BS in Business Administration with an Entrepreneurship concentration from the University of Vermont—where she wrote her senior business plan for a healthy fast-casual concept and cemented her commitment to hospitality.

Post-college, she served as a Controller for several NYC restaurant clients, including The Meatball Shop, No. 7 Sub, Galway Hooker, and Fiddlesticks. She then joined The Meatball Shop in-house, quickly rising to Director of Finance & HR before transitioning into operations to gain hands-on experience managing staff, caring for guests, and even cooking on the line. After four years, she moved on to learn from new environments.

A year at Juice Press clarified that a single role couldn’t satisfy her appetite for variety and problem-solving. She shifted into consulting, supporting restaurants on everything from financial reporting to employee training and systems development.

Most recently, Tania founded, owned, and operated Nettie’s House of Spaghetti in Tinton Falls for six years before stepping away in 2024.

Today, she draws on her extensive owner-operator experience to support a wide range of clients—from fast-casual concepts to fine dining—offering strategic financial guidance grounded in real-world operational insight.
